If you’re looking for a quick and painless dinner for the fam, I think you’ll love our easy instant pot recipe: pepperoncini shredded chicken! Just a couple of ingredients, 35 minutes in the instant pot, and BOOM. Super fast and delish shredded chicken that’s great on Hawaiian roll sliders (our fave!), perfect for taco Tuesday or add on top of a crisp salad. Simple, quick and healthy…can’t beat it! (Thank you to my uncle-in-law Tim for the original recipe idea!). See below for the easy recipe.
Ingredients:
2-3 lbs chicken breast
jar of pepperoncini peppers
salt + pepper to taste
corn starch
Directions:
1 – Add chicken and peppers w juice to the instant pot.
2 – Cook on “meat” setting for 35 minutes
3 – Remove and shred chicken, sprinkle w salt + pepper to taste
4 – Turn instant pot to sauté
5 – Remove 1/4C. cooking liquid and whisk in 2t. corn starch to create a slurry
6 – Whisk in slurry to the instant pot and let liquid sauté for 2-3 minutes until thickened
7 – Add chicken back in and toss to coat

Super simple shredded chicken recipe for the family in case you are running out of ideas…like me. 😉 The chicken is tender and falling apart after cooking in the instant pot, and creating the sauce all in the same pot saves time when it comes to clean up afterwards. Oh my, this might have been the easiest dinner I’ve ever made and it was an instant favorite! Being from Illinois, Italian beef sandwiches was one of my favorite things. 5 years ago I was diagnosed with celiac disease & a beef allergy. This is an amazing substitute and really satisfied that craving! The only thing I changed was that I added about a 1/4 pack of ranch seasoning. It is spicy, but everyone loved it!
