I’ve been baking my feelings during this self-isolation, and one of our favorites is gluten free blueberry crumble muffins….YUM. The recipe is a mash up of a bunch of different recipes I found, tested and altered, so who knows where the original originated from. But here is our version, and we LOVE these soft, crumbly, cinnamon-y blueberry goodies! I baked a batch with the girls today on Instagram stories [HERE], and it was messy, slightly frenzied and very fun in the end, much like every baking sesh we do together, ha! I was so swirly that I forgot to take any progress pics, so I’ll try to add those the next time we bake these blueberry crumble muffins…which will be soon….because, again I say: YUM.

I hope you guys love these gluten free blueberry crumble muffins as much as we do! The recipe can definitely use regular flour instead of GF, and you can play around with which extract and amount you prefer. Next time, I might add even more blueberries, or I might try cooking them down first to sort of create a concentrated flavor in a compote. Anyway, let me know if you make them and what you think!
