The weather is getting chilly, and that means it’ soup season! I’ve got a house full of chaos…err…kids, and for me, soup night needs to be simple and easy. No time for a from-scratch meal every night of the week, so these two super simple “no cook” soup recipes are just the thing! If you don’t have a Trader Joe’s nearby, just sub in similar products from your local grocery store, but these are some of our faves if you can swing by a TJ’s.
Roasted Red Pepper + Tomato Soup
You’ll need two boxes of Trader Joe’s Tomato + Red Pepper Soup and two cans of fire roasted diced tomatoes. Warm up the soup while simmering the diced tomatoes with a pinch of sugar to get the acidity out. Mix together, top with shaved parmesan cheese and BAM. Delicious simple soup done in 10 minutes. For something to dip in the soup, take some focaccia bread from Trader Joe’s, split it in half and make a grilled cheese out of it! SO. GOOD.
Chicken and Veggie Soup
Grab four jars of Trader Joe’s Garden Vegetable Soup and heat over low while you shred 1-2 rotisserie chickens. Add the shredded chicken to the pot, let it all warm up for a few minutes, and done! For something extra, slice up some bread (we use GF Canyon Bakehouse), add butter, a layer of shaved parmesan and a sprinkle of parsley, toast it in the oven or toaster oven, and you’ve got some yummy, cheesy (and EASY) parm toast on the side!
